Complete Method of Pickling Bacon

1. Homemade method of pickling bacon

Step 1: Add salt to the pan and fry it until hot, then apply the salt on the meat evenly.

Step 2: Pierce a hole on one end of the meat, thread it through the thread and hang it up to dry outdoors for three hours.

Step 3: Then coat the meat with a mixture of light soy sauce, dark soy sauce, sugar and white wine.

Step 4: After the meat is hung with juice, leave it for twelve hours, wait until the surface solidifies and then hang it in the sun for another 12 hours.

Step 5: Take the meat back and apply star anise, pepper and cinnamon powder on it.

Step 6: Finally, dry the meat in the sun for two to three days.

2. Method of curing bacon in Sichuan

Step 1: Cut the pork belly into appropriate sizes and place it in a large bowl.

Step 2: Apply salt on the surface of the pork belly in the bowl and rub each piece of meat evenly.

Step 3: Continue to apply sugar, fennel, star anise, pickled pepper wine, five-spice powder and Sichuan peppercorns.

Step 4: Soak the meat in the sauce repeatedly in the pot, and then leave it overnight until the flavor penetrates.

Step 5: Hang the meat to air dry until it stops dripping.

Step 6: Put the meat back into the bowl, apply light soy sauce, dark soy sauce and five-spice powder, and mix well.

Step 7: Dry the meat for about a week.
