How to prepare eggplant when frying it

1. Before frying the eggplant, you need to process it first, hit it with the back of a knife, then cut it into long sections about five centimeters long, and then soak it in water.

2. Add a small amount of salt to the water used to soak the eggplants, soak for about five minutes, remove from the water and squeeze out the water for later use. Also cut the prepared meat into minced meat for later use.

3. Heat the pan over the fire until it is dry, add an appropriate amount of vegetable oil, and when it is 70% hot, add shredded ginger and minced meat and stir-fry.

4. After the shredded ginger and minced meat in the pot are fried until fragrant, you can pour the processed eggplant into the pot, then turn the heat to medium, and stir-fry back and forth for about three minutes.

5. At this time, the eggplants have softened, then add chicken essence, cooking wine, soy sauce and other seasonings. Then stir-fry a few more times.

6. If you like the aroma of garlic, you can add some minced garlic prepared in advance. When you smell the garlic, you can remove from the heat and serve.
