Suitable for: People with poor appetite, stomach and abdominal pain caused by spleen and stomach yang deficiency or qi deficiency. Ingredients:

150 grams of fresh grass carp meat, 5 egg yolks, 1 egg white, 750 grams of salad oil (75 grams consumed), 250 grams of flour (half glutinous rice flour and half japonica rice flour), 5 grams of cooking wine, 3 grams of chopped green onion, 3 grams of refined salt, 1 gram of MSG, and 5 grams of dry starch.

How to make egg yolk fish strips

1. First cut the fish into 4 cm long, 1 cm thick, 1 cm wide strips, soak them in cold water, then take them out and dry them with a clean towel, put them in a bowl, add cooking wine, salt, and MSG, mix well, add egg white, dry starch, chopped green onion, mix well to make starch; disperse the egg yolk, add flour to make egg yolk paste.

2. Wash the pan and place it on high heat. Pour in salad oil and heat it to 40% hot. Evenly coat the fish strips with egg yolk paste and fry them in the pan until they turn light yellow. Remove them from the pan. When the oil temperature rises to 60% hot, add the fish strips into the pan and fry them until they turn golden brown. Remove them from the pan and serve. Serve with a plate of pepper salt.

Tips:

1. Cut the fish strips into even lengths. Mix the egg yolk paste into an even thickness.

2. When frying fish strips, you must control the oil temperature well and avoid frying them all at once to prevent the outside from being burnt and the inside from being undercooked.
