Ingredients for pickled sweet and sour ginger

When pickling rock sugar and vinegar ginger, you need to prepare one kilogram of fresh ginger, three hundred grams of rock sugar, six hundred grams of white vinegar, and a proper amount of edible salt. Then prepare a clean glass bottle.

How to make pickled sugar and sour ginger

1. Wash the prepared ginger with clean water, clean the dirt on the surface, remove its skin, and then dry the surface moisture for later use.

2. Cut the dried ginger into slices. The thinner the slices, the better. After cutting, add a small amount of salt to marinate for two hours to ensure that the moisture is not removed.

3. Remove moisture from the prepared glass bottle. It is best to disinfect it with white wine. Then put the marinated ginger slices into the bottle, with a layer of ginger slices and a layer of rock sugar. After putting them in, add white vinegar. The amount of white vinegar must cover the ginger slices.

4. Seal the bottle and place it in a cool place for pickling. After four or five days, the rock sugar inside will be completely melted and the ginger slices will be flavorful. At this time, the homemade rock sugar and vinegar ginger is pickled and can be taken out and eaten. When taking it out, use clean and dry chopsticks to prevent the pickled ginger slices from deteriorating.
