Ingredients for pickled pine eggs

When you make pickled pine eggs yourself, you need to prepare 100 grams of duck eggs, 200 grams of salt, 75 grams of black tea powder, 350 grams of soda ash, 1,500 grams of raw stone, 70 grams of pine ash, 10 grams of yellow ochre powder, an appropriate amount of clean water, and an appropriate amount of loess.

Steps for pickling preserved eggs

1. Put the prepared edible salt, black tea powder, soda ash, quicklime, pine branches, yellow lead powder and other materials together, mix well, put into the pot, add water and boil. After boiling, take out and filter to remove the residue, and set aside the soup.

2. Put the prepared fresh duck eggs into the jar, press the top layer with sorghum stalks, then pour the cooked soup into the jar. The soup must cover all the duck eggs, then seal the jar. After forty-five days, the preserved eggs inside will be ready and can be taken out of the jar when mature.

3. After taking the preserved eggs out of the jar, wash them with cold boiled water to remove the moisture on the surface. Then mix the juice and loess into yellow soup and paste it on the surface of the preserved eggs. Stick the outermost layer with grain sugar and seal it directly in the jar for storage. Take them out and eat them anytime you want. This is the delicious homemade preserved eggs.
