Method 1

Wild Mushroom Cream Soup

1. Soak the porcini in 250 ml of warm water for half an hour, then drain and chop, leaving the juice for later use.

2. Heat the butter and olive oil together until the butter melts, add the chopped leeks, purple onions and minced garlic, and stir-fry over medium heat for about 5 minutes until the vegetables are softened.

3. Then add fresh chestnut mushrooms and button mushrooms, continue to stir-fry over medium heat until softened, add beef broth and bring to a boil.

4. Pour in the porcini, soak the porcini soup and thyme, simmer on low heat for about 30 minutes, and season with salt and black pepper.

5. Take 3/4 of the soup and the ingredients, blend them in a food processor and pour them back into the pot. Add double cream and stir slowly over low heat until the texture becomes thick!
