When you pickle fish at home, you need to prepare fresh fish and peppercorns, as well as seasonings such as salt, soy sauce, and fennel, and finally some dried chilies.

Homemade marinated fish steps

1. Wash the prepared fish with clean water, remove the internal organs, clean them, and then use toilet paper to absorb the moisture. The drier the better.

2. Put the prepared peppercorns, salt, cumin, dried chili and other seasonings into the pan and stir-fry. After they are cooked, take them out and spread them evenly on the surface of the fish. Add salt and soy sauce, spread them evenly and marinate.

3. When marinating, you can put heavy objects on the top of the fish to allow the moisture inside to drain naturally. It will take about seven days to be marinated. However, you need to turn the fish over every two days during the marinating process so that the fish can be more evenly flavored.

4. After marinating, take out the fish, hang them together with hooks and put them in the sun. After drying, you can take them down and put them in a lotus leaf jar and seal it for storage. Take them out and eat them in the summer of the following year. They taste especially good and have a natural mellow aroma.
