How to make almonds

1. Almond Tofu

Material:

1 can of almond milk, 1 bag of milk, a little agar (usually about 10 grams), a small cup of diced fruit, appropriate amount of white sugar and honey.

1. Soak agar in cold water for 5 minutes, then heat it to dissolve;

2. Prepare a cup of honey water or osmanthus syrup and put it in the refrigerator;

3. You can also prepare a portion of mango sauce and pour it on the almond tofu to eat together; (The method of mango sauce is attached below)

4. Mix milk, almond milk and sugar, heat and boil, add to melted hot agar, mix well while hot, then pour into a container. After it is completely cooled and frozen, put it in the refrigerator;

5. When eating, cut the curd in the container into any shape you like with a knife, and then pour in iced sweet water. You can choose honey water, osmanthus syrup, or white sugar water. You can also cut various fruits into cubes and sprinkle them on top according to your personal preference.

2. Pan-fried almond pumpkin cake

raw material:

100 grams of pumpkin, appropriate amounts of flour and glutinous rice flour.

Ingredients:

Some almonds, black sesame seeds, and coriander leaves.

1. Cut the pumpkin into thin slices;

2. Wash almonds, coriander leaves and black sesame seeds and drain;

3. Steam the pumpkin;

4. Mash the pumpkin, add glutinous rice flour and flour. The ratio of the two flours is 1:1. The amount of flour should only be added until the dough is not sticky.

5. Knead into a non-sticky dough;

6. Divide into small balls, roll into balls and flatten into pumpkin cakes, and top with almonds, coriander leaves and black sesame seeds;

7. Brush a thin layer of oil on the pan, fry the side without almonds first, and fry over low heat until golden brown;

3. Refreshing Almond Tofu

raw material:

250ml milk, 100ml almond milk, 10g almond cream, 12g agar, 20g white sugar

practice:

1. Soak agar until soft and dissolve it with 100g water;

2. Dissolve the almond cream with cold water, add it to the agar and stir thoroughly;

3. Add milk, almond milk and sugar to agar and stir thoroughly until the agar is completely melted;

4. Pour into the mold, cool, and put in the refrigerator for 4 hours;

5. Use 20g of white sugar + 200ml of water + 1 teaspoon of osmanthus sugar to make syrup, let it cool for later use;

6. When eating, take out the solidified almond tofu from the refrigerator, cut it into pieces, add sugar water, and start eating.

How to make almond brittle

Material:

150g almonds, 100g crushed peanuts, 30g sesame seeds, 150g white sugar, 100g maltose, 1 tablespoon (15ml) cooking oil.

practice:

1. Fry sesame seeds and crushed peanuts over low heat until fragrant, then let cool and set aside. You can also buy already fried sesame seeds and peanuts.

2. Put cooking oil in the pot, add white sugar after heating, and melt the sugar over low heat. Stir evenly with a spoon. Be careful not to use too high a heat to avoid the sugar from getting stuck. It is best to choose a pot with thicker walls. I use a Lock&Lock stainless steel pot.

3. After all the sugar has melted, add maltose. After adding maltose, it will bubble up and give off the special aroma of maltose.

4. Add almonds, sesame seeds and peanuts into the syrup and mix well.

5. While still hot, pour the almond candy onto a large enough piece of tin foil.

6. Cover the almond candy with another piece of tin foil and flatten it with a rolling pin. Note that the sugar will be very hot right out of the pot, so it is best to wear heat-insulating gloves to avoid burns. Be sure to shape the sugar as soon as possible while it is hot. The almond candy will be difficult to shape after it cools down a little. Wipe the tin foil with a piece of ice cube, and it will be easy to peel off the foil. Use a knife to cut the sugar into pieces of appropriate size while it is hot, let it cool, store it in a sealed container, and eat it as soon as possible.
