Steps to cook salted duck liver

1. Before making salted duck liver, you must first soak the prepared fresh duck liver in clean water for no less than five hours to remove the blood from the duck liver.

2. Put cold water in the pot, put the soaked duck liver directly into the pot, then add onion, ginger and a small amount of high-proof liquor, bring to a boil, then reduce the heat and cook for ten minutes. When the duck liver is just cooked, take them out quickly. During the cooking process, constantly take out the blood foam in the pot and throw it away.

3. Add water to a new pot, put all the prepared peppercorns, star anise, bay leaves, fennel and other spices into the pot, then add salt, onion, ginger, heat and bring to a boil, and cook for about ten minutes to get the brine.
