Ingredients for Fried Green Beans with Watermelon Rind

200g watermelon rind, 100g fresh green beans, some shredded red pepper, 1 teaspoon (5g) salt, 1/2 teaspoon (3g) chicken stock, 1 tablespoon (15ml) oil

How to make fried green beans with watermelon rind

Peel off the remaining pulp and green rind of the watermelon, leaving only the white part, and cut into 5cm long strips. Wash the green beans with water.

Boil half a pot of water, put the cut watermelon rind in and blanch it, then remove and drain; then put the green beans in and cook for 3 minutes to remove the bean smell, then remove and drain.

Heat the wok, add oil, heat over high heat, add the watermelon rind and stir-fry for 1 minute, then add the green beans and stir-fry together, add salt and chicken essence, sprinkle with shredded red pepper, stir-fry over high heat for another 2 minutes and serve.

Tips

When buying watermelons, you should choose those with thick skin. Watermelons with thin skin will not show the inside.

It is best to buy fresh edamame with pods and peel the green beans yourself. Of course, you can also buy them already peeled.

Using soybeans instead of green beans and stir-frying them together with watermelon rind is also a good combination.
