How to make beef and watermelon rind steamed dumplings

1. Chop the beef into small pieces (I was lazy this time and used a food processor to grind the meat, but I still think it tastes better when chopped).

Peel the watermelon rind, leave some of the red flesh, chop it up, and squeeze out the moisture with gauze.

2. Add cooking wine (just a little), light soy sauce (a little), ginger powder, five-spice powder, salt (appropriate amount), black pepper (optional), and chopped green onion to the beef and mix well. Add appropriate amount of sesame oil to the watermelon rind, mix well, then add it to the meat filling and mix well.

3. Take 1/3 of the flour, blanch it with boiling water, knead it into a smooth dough, and let it cool.

4. Add cold water to the remaining 2/3 flour and knead it into a dough. Knead it together with the hot dough in the first step. Knead it for a while longer and cover it with a wet towel and let it rest for 30 minutes.

5. Continue kneading the dough for a while.

6. After kneading the dough, roll it into long strips and cut it into small doughs with a knife.

7. Roll out the dough.

8. Make dumplings.

9. Brush a layer of oil on the steamer mat and arrange the dumplings in it.

10. Bring the water to a boil and steam until cooked.
