1. Raw materials.

2. Wash the duck and cut it into pieces. Put half a piece of crushed ginger in cold water and boil it with the duck over medium-low heat. Continue to boil for one minute, add a tablespoon of cooking wine. Boil again, remove and rinse.

3. Put the figs into a basin of water with an appropriate amount of salt, stir in a clockwise direction, wash them clean, and remove them for later use.

4. Add the duck, figs, onion, ginger and enough water into the pressure cooker.

5. Turn the switch to the soup stewing button. After the steam is exhausted, add salt and white pepper, and continue to stew for half an hour (do not cover the lid at this time), until the stewed soup is milky white.

6. Remove from heat and serve in soup bowls.

Tips

1. Boil the duck first to remove the blood and dirt from the duck, and add cooking wine to remove the fishy smell. Wash the figs and add salt because figs are sweet and grow on trees, so they are inevitably crawled by insects and ants, and kill bacteria.

2. Soaking the duck in cold water can ensure that the stewed soup is clear without impurities and turbidity.

3. The most taboo thing for a good soup is too many ingredients. For this soup, just adding salt and white pepper is enough.

4. As for salt, just add it according to your own taste. I have always had a lighter taste, so I wrote it based on my estimation.

5. If you have a casserole at home, you can use it to stew, but it will take longer, probably about two hours! I don’t have a casserole at home, so I use a pressure cooker, which is faster and more convenient.
