The recipe is slightly modified from Junzhi's [Rich Chocolate Hazelnut Cake]. The taste is very rich and the texture is smooth, but the sweet orange flavor is strong and the rum flavor is not well reflected.

Ingredients for Orange Chocolate Almond Cake

50g almond slices, 100g butter, 65g Lindt orange chocolate, 35g Lindt dark chocolate, 1 teaspoon (5ML) of mocha coffee powder, 40g of fine sugar, 2 eggs, 50g of corn starch, 15g of low-gluten flour, 1 tablespoon (15ML) of rum. Baking: middle layer of the oven, 350 degrees for upper and lower fire, a total of about 50 minutes

How to make sweet orange chocolate almond cake

1. Chop most of the almond slices and leave a small part for the top.

2. Mix the crushed almonds, corn starch, mocha coffee powder and low-gluten flour together.

3. After cutting the two chocolates into small pieces, heat them in water and stir them constantly to make them melt into liquid. Then put them at room temperature for later use (be careful not to let them solidify again).

4. Separate the egg whites and yolks. Put the egg whites in a clean bowl, add 40 grams of fine sugar in portions, and beat them into a wet foam state that can be pulled into a curved hook, and set aside for later use.

5. Soften the butter in advance and beat it with a whisk until it is fluffy.

6. Pour the melted chocolate into the butter.

7. Pour in the rum and continue beating evenly with a whisk.

8. Pour in half of the mixed powder prepared in the second step and beat evenly with a whisk.

9. Add an egg yolk and continue beating evenly.

10. Pour in the remaining half of the mixed powder and mix well.

11. Add the second egg yolk and beat until smooth.

12. Add the beaten egg whites into the batter.

13. Mix evenly using the folding technique, which is similar to stir-frying, starting from the bottom and stirring upwards, until completely evenly mixed.

14. Apply a thin layer of butter on the inner wall of the mold to prevent sticking. Pour the mixed cake batter into the mold and sprinkle with almond slices. Then put it in a preheated oven at 350 degrees. After baking for 25 minutes, cover the surface with tin foil and bake for another 20-30 minutes until the cake is completely puffed up and ready to be taken out of the oven.
