Fish-flavored cowpea

Wash the cowpeas, cut them into 3 cm pieces, and place them in a bowl for later use; mince ginger and garlic, remove the seeds from the soaked red pepper, mince them, and place the chopped green onion in a small bowl for later use; pour boiling water into the bowl containing the cowpeas, soak them until the cowpeas have no raw smell, remove the cowpeas and place them on a plate, add appropriate amount of salt and sesame oil, mix well and let them cool. Put the wok on high heat, add appropriate amount of oil (just enough to cover the ginger, garlic, and chili powder) and heat it to 80%, pour it into the bowl containing the ginger, garlic, and chili powder, scald it with the oil temperature to bring out the aroma, add sugar, soy sauce, vinegar, sesame oil, chopped green onion, and MSG to make fish-flavored sauce. Mix the fish-flavored sauce with the cooled cowpeas.

Sweet and Sour Cowpea

Heat the oil in a pan, add the cowpea cut into inch-long pieces, stir-fry until 50% hot, add salt, chicken essence, and sugar for seasoning (the amount of sugar can be larger). When it is almost cooked, pour in an appropriate amount of white vinegar and stir-fry until cooked.

Sauteed Dried Shrimp with Cowpea

Pick the young cowpeas, clean them, cut them into sections, blanch them in boiling water, remove them, drain them, and place them on a plate, sprinkle them with chopped green onions and shredded ginger. Heat a wok with a proper amount of peanut oil, add a small amount of Sichuan peppercorns and fry them until fragrant, remove the peppercorns, add dried shrimps and fry until fragrant, pour them on the cowpeas, simmer them for a while, then add salt and MSG and mix well.

Vegetarian Cowpea Salad

Braised Spicy Beans

Pinch off the ends of the peas, cut into sections, blanch thoroughly with boiling water, remove and rinse with cold water, and drain. Heat oil in a pot, add scallion, ginger, and garlic slices, stir-fry for a few seconds, then add soy sauce, salt and a small amount of water, bring to a boil over high heat, then simmer over low heat until the soup is dry and the peas are almost soft, finally add a little Lao Gan Ma chili sauce and simmer for another 2-3 minutes until the soup is thick.

Pick and clean fresh cowpeas, cut them into 1.5-inch segments, and cut tomatoes into small pieces. Heat oil in a pan over medium heat, add chopped green onions, fry the tomatoes for one to two minutes, add salt and an appropriate amount of white vinegar, pour the cowpeas in and fry together, add a small amount of water, turn to high heat and stir-fry, adjust the acidity and saltiness with white vinegar and salt, turn off the heat when the cowpeas are cooked, add a small amount of MSG and mix well.

Stir-fried cowpea with mustard greens

Pick and clean the cowpeas and dried mustard greens, cut the cowpeas into inch-long sections, and cut the green onions into small sections. Put the pot on the fire, then add oil. When the oil is hot, fry the green onions until they are fragrant, add the cowpeas and stir-fry for a few times, add salt, sugar, and appropriate amount of water. Add the dried mustard greens into the pot, stir-fry for a few times, cover the pot and simmer for 3-5 minutes. When the cowpeas and dried mustard greens are cooked, add MSG, stir well and serve.
