Ingredients for stir-fried watermelon rind

600 grams of watermelon rind, one green pepper, one red pepper, a handful of green onions, a head of garlic, appropriate amount of black pepper, a little salt and sugar, and appropriate amount of cooking oil.

Steps for stir-frying watermelon rind

1. Wash the prepared watermelon rind, then use a knife to scrape off the part that is in contact with the flesh. Next, remove the old green skin on the outside and set aside.

2. Cut the processed watermelon rind into slices of your favorite shape, then put it in a small bowl, add table salt, mix well and marinate for twenty minutes.

3. Wash off the salt from the pickled watermelon rind with clean water, and squeeze out all the water from the rind with your hands.

4. Remove the seeds from the green and red peppers, wash them, cut them into thin strips and set aside. Peel the garlic and flatten it with a knife. Wash the shallots, cut them into chopped green onions and set aside.

5. Put oil in the pan, heat it up, add green and red pepper shreds and garlic and stir-fry for less than two minutes.

6. Turn the heat to maximum, put the processed watermelon rind slices into the pot and stir-fry. After three minutes, add appropriate amount of salt, sugar and prepared black pepper. Stir-fry evenly, sprinkle chopped green onion on top to season, then take out and serve.
