Cold Scallions

1. When making cold-mixed sand onions, you can prepare 500 grams of fresh sand onions, remove the mud and sand, wash them with clean water, then put water in the pot and add a small amount of table salt, bring to a boil, put the sand onions in and blanch them, take them out and cool them down in cold water.

2. Use a knife to cut the shallot into two sections, squeeze out the water with your hands, then add garlic paste, sugar, soy sauce, vinegar and other seasonings, and mix well. Put oil in a hot pot, heat it, add the peppercorns and stir-fry until fragrant, then pour the hot pepper oil into the shallots, mix well, and serve.

Scallion scrambled eggs

1. Scrambled eggs with shallots are also delicious. When frying, wash and chop 300 grams of shallots. Then crack two or three eggs into a bowl and beat them into egg liquid.

2. Heat oil in a pan, then put chopped shallot into the pan and fry until soft. Add a small amount of salt and stir well. Then pour in the egg liquid and stir-fry quickly. After the egg liquid is completely solidified, take out and serve on a plate. The scallion scrambled eggs are ready to be eaten.
