Store before drinking

Freshly produced raw liquor generally contains harmful substances such as sulfide hydrocarbons and mercaptans, which can cause dry mouth and headaches after drinking. Therefore, new liquor must be stored for a certain period of time after production to volatilize these harmful substances. Generally speaking, new liquor needs to be stored for more than one year before it is suitable for drinking. This is also the reason why many companies now produce vintage raw liquor.

Reduce the alcohol content before drinking

Generally speaking, the stored raw liquor still needs to be blended before it can be consumed. The alcohol content of raw liquor is relatively high, and even after being stored for more than a few years, it still has a content of about 60 degrees, so it must be blended to reduce the alcohol content before it is more suitable for drinking. For those who drink raw liquor without blending, it is best to drink less.

How to reduce the alcohol content of raw liquor

Mixing different alcohol content raw juices together to reduce the alcohol content is called blending. The alcohol content of raw juice can only be reduced by blending, and cannot be directly treated by adding water.

The original liquor produced through solid-state fermentation has different alcohol content in different rounds during the distillation process. Generally speaking, the high alcohol content is around 64 degrees, while the light alcohol content is 20 degrees or even more than ten degrees, which is called "liquor with a hint of wine". Normally, after adding water to the original liquor, an emulsion will form due to the presence of a large amount of lipid substances, and turbidity will appear. This is one of the important methods to distinguish original liquor from non-original liquor. Therefore, alcohol reduction can only be a blend between original liquor and "liquor with a hint of wine". Any blending that has been added with water (plasticizers need to be added at the same time) and edible alcohol is, in essence, no longer original liquor, but is called "blended liquor".

Shelf life of raw liquor

The liquor of raw liquor is made entirely from grains. If it is not finished, it will easily go bad if not properly stored. Here is how to properly store unfinished raw liquor. If it is not finished, the bottle cap should be tightly fastened and stored in the refrigerator at low temperature. It is best to drink it within 7 days, otherwise as the liquor evaporates over a long period of time, the taste will deteriorate when you drink it again.
