Ingredients for Homemade Dried Pickled Cucumbers

To make homemade dry pickled cucumbers, you need to prepare 5 kilograms of fresh cucumbers, appropriate amounts of chili powder, sesame oil, soy sauce, sugar, and salt, and a small amount of MSG.

Steps to make homemade pickled cucumbers

1. Wash the prepared fresh cucumber with clean water, then cut it twice vertically in the middle, so that one cucumber will become four cucumber strips.

2. Remove the core of the cut cucumber strips, and then place the cucumber strips in the sun for about three days. Wait until 80% of the cucumber's moisture is lost before taking them out for later use.

3. Mix the dried cucumbers, chili powder and salt together and marinate for 24 hours.

4. Take a pot, put it on fire and boil it, put the pickled cucumber strips into the pot and cook for three minutes, then add MSG, sugar and soy sauce and mix well, turn off the heat, let it cool naturally, put it into the pickled vegetable jar and seal it. After a month, it will be pickled and you can eat it whenever you want.
