When making Huadiao chicken at home, you need to prepare an old hen, 100 grams of Huadiao wine, 125 grams of Daner soup, 30 grams of honey, 75 grams of pork fat, 50 grams of oyster sauce, 35 grams of ginger slices, 35 grams of green onion strips, and 5 grams of MSG.

Specific steps for making Huadiao Chicken

1. Kill and clean the prepared chicken, then put it into the pot and blanch it for two minutes. Then drain the water, apply oyster sauce on the outer layer of the chicken, then apply honey, and finally cut the pork fat into thin slices. After doing all this, put the remaining oyster sauce and honey as well as MSG, Ertang and other seasonings in the same bowl to make a sauce for later use.

2. Heat the pan over high heat, then put the pork fat slices on the bottom of the pan and fry slowly. After the fat is fried out, put the chicken on the meat surface, then fry over low heat until the chicken's legs and flanks are slightly yellow. Then add ginger and green onion, mix well, and finally add Huadiao wine and sauce, and bring to a boil over high heat.

3. After the pot boils, remove it from the heat immediately, then put it back on the heat after it cools down and reheat it. Repeat this eight times. You can turn the chicken over a few times in the middle. It takes about fifteen minutes to simmer the Huadiao Chicken. After it is done, take out the scallions and ginger, and the Huadiao Chicken with crispy and tender meat is ready.
