1 long eggplant with pork filling 200g

1 egg Flour

Corn starch to taste A scallion

How to make eggplant box

1. Add chopped green onion (I added chopped onion), salt, ginger powder, pepper powder, a little soy sauce, stir well and set aside

2. Wash the eggplant and slice it into pieces. Each piece should be about 0.5 cm thick. Do not cut between each piece.

3. Fill the eggplant with meat filling, flatten it and spread it evenly around the eggplant.

4. Add flour, corn starch, a little salt and a small amount of water to the eggs to make a uniform paste, preferably slightly sticky.

5. Heat the pan until 70% hot, dip the eggplant box in the egg batter, put it into the pan, turn to low to medium heat, fry until both sides are golden brown, remove from the oil and drain. Dip in pepper and salt when eating

Tips

1. Chop the chopped green onions into small pieces to avoid oil splashing during frying. You can also omit the chopped green onions.

2. You can also peel the eggplant before cutting it. The oil of fried eggplant without peeling it will turn black;

3. The oil temperature must be hot enough so that the eggplant boxes will not fall off the batter. If you are not sure about the oil temperature, you can use chopsticks to scoop up a little bit of batter and drop it into the oil pan. If the batter immediately settles and floats on the oil surface, you can start frying.

4. If you have crispy frying powder, you can add some to the egg batter, so that the fried crust will be crispier.
