Fried eggplant boxes with minced meat

1. Chop the pork tenderloin into minced meat and put it in a bowl. Pour in soy sauce, cooking wine, salt and sesame oil, stir well and marinate for 10 minutes.

2. Add a little water to the minced meat and beat in one direction until it becomes sticky.

3. After removing the stems of the long eggplants and washing them, cut them once, then cut them 2 mm apart without breaking them, and then cut them 2 mm apart to form a piece.

4. Use chopsticks to stuff the meat filling into the eggplant slices.

5. Mix flour, starch, eggs, salad oil, and a little ice beer into batter

6. Pour oil into the pot and heat it over high heat until it is 80% hot.

7. After coating the eggplant box with batter, fry it in oil for about 1 and a half minutes. Remove it when both sides are golden brown.

Tips

1. Mix the flour and starch in the batter in a ratio of 1:1, and add an egg, so that the fried batter will be softer.

2. Use low heat when frying eggplant boxes to avoid the outside being burnt while the inside is uncooked.

3. When eating, you can also dip it in garlic chili sauce or Thai hot and sour sauce, which will make the taste richer and more refreshing.

4. For this dish, it is recommended that you use iced beer instead of water to make the batter. This way the eggplant boxes will be very tender and crispy.

5. It is more economical to use a small milk pan to fry things. Because the bottom area of ​​the milk pan is small, pour a small amount of oil, as long as the height is enough, you can fry things.
