How to make braised pork with dried cowpea

Do you like braised pork with dried cowpea? I love it very much. It is my best dish. I am in a good mood today so I would like to share it with you:

Braised pork with dried cowpea recipe:

1. Soak the dried cowpeas until soft one day in advance, wash and cut into long sections for later use, slice the green onions and ginger. Crush the rock sugar.

2. Use a knife to scrape the pork belly skin clean and cut into 2.5 cm square pieces. After blanching, remove and set aside.

3. Crush the rock sugar, fry it in a pan until it turns into sugar color, add water and turn off the heat;

4. Put the pot on the fire, put the ginger and meat into the pot and fry until the oil comes out and the meat turns golden yellow, add the star anise and scallion, stir-fry for a few times, add the wine, add boiling water (covering the meat), add sugar color, bring to a boil over high heat, skim off the foam and floating oil, then simmer over low heat until the meat is 80% cooked.

5. Finally, add dried cowpeas, salt and a little soy sauce to season. Cook until the dried cowpeas are well-flavored. Add sugar and simmer over high heat to thicken the soup. Remove from heat.

How to make braised pork with dried cowpea:

1. Soak the dried cowpea in warm water for 2-3 hours

2. Wash and cut the pork belly into pieces, and blanch in boiling water for 5 minutes

3. Heat the oil in a pan, add sugar when it is 50% hot, then add the meat and stir fry.

4. After the meat is evenly colored, add onion, ginger, and soy sauce

5. Add enough water to cover the meat, add spices (star anise, cinnamon, etc.) and start stewing

6. Add dried cowpeas after half an hour

7. Bring to a boil over high heat, then simmer over low heat for 20 minutes

8. Add salt, chicken essence and other seasonings, stir well and serve.
