Ingredients for Teochew Pomfret Porridge

600g white pomfret

1/2 teaspoon salt

4 tablespoons oil

10 shallots, sliced

2~3 pieces of dried fish, roasted and pounded

2 bowls of rice

8 cups water

1 tbsp chicken crystal powder

4 tablespoons soy sauce

Pinch of salt

A pinch of pepper

1 1/2 tsp preserved vegetables

2 shallots, diced

2 large corianders

2 tablespoons soy sauce

How to make Chaozhou Pomfret Congee

1 Cut the white pomfret into thick slices and marinate with 1/2 teaspoon of salt.

2 Heat 4 tbsp oil and sauté shallot slices until fragrant.

3 Put rice and water into the pot and cook until soft but still in the shape of rice grains.

4 Before eating, add fish, chicken powder, soy sauce and salt and bring to a boil, then turn off the heat.

5 Serve the porridge in a bowl and sprinkle with pepper, preserved vegetables, chopped green onions, coriander, fish powder and fried shallot oil.

6 Can be served with soy sauce

1. Pomfret is rich in unsaturated fatty acids, which can lower cholesterol. It is a good fish food for people with high blood lipids and high cholesterol.
