How to make tomato sauce and garlic chili sauce at home

Main raw materials

Tomatoes, white sugar, vinegar, etc.

Preparation method

Select about 2 kg of ripe tomatoes that are not rotten, diseased or pest-free, wash them, steam them in a steamer, peel them, and filter out the seeds with clean gauze, leaving the pulp. Weigh 150 grams of vinegar, add about 15 grams of five-spice powder and soak for 2 hours, then add 0.3-0.4 kg of white sugar and 35-50 grams of salt, and pour it into the tomato pulp after it is completely dissolved and mixed evenly. Add a little onion, minced garlic, and an appropriate amount of pepper.

Mix the tomato and meat sauce and put it into a pot and cook over low heat, stirring while cooking until it becomes a thick paste. Put it into a clean and dry glass bottle, cover it and seal it. Store it in a cool and dry place.

The process flow is as follows: select materials → wash → steam → peel → filter out seeds → soak and add sugar and salt → pour into tomato pulp → add onion etc. → mix → simmer over low heat → bottle and seal → store for sale.

Step 1: Wash the naturally ripe tomatoes, put them in the microwave for 2 minutes, remove the skin and mash them into a paste

Step 2: Take a pot and put an appropriate amount of water and sugar in it. When the water is boiling, add tomato puree and a little white vinegar. Stir constantly until the water is gradually absorbed and then remove from the heat.

Step 3: Put it in a clean glass bottle, let it stand, cool naturally, and then put it in the refrigerator

Note: Don't make too much each time. A week's worth is enough.

How to make chili garlic sauce:

Main ingredients: chili pepper, tomato

Accessories: ginger, garlic, salt, sugar, rice vinegar

1. Take fresh chili pepper, 500g tomato, a piece of ginger, and two cloves of garlic. Put them into a blender and blend them into a paste;

2. Put a small bowl of water in a wok, cook over medium heat, add all kinds of paste into the pot, and simmer the sauce (leave half of the garlic for the last part), add sugar while simmering

(a little), salt, and half a bottle of rice vinegar;

3. Remember to stir constantly with a spoon to prevent sticking to the pan, and turn off the heat when it turns from thin to thick;

4. Pour in the remaining minced garlic and bottle it after it cools down.

Operation Note:

1. For those who are not good at eating spicy food, you can add a few red peppers, and add more tomatoes and sugar to alleviate the problem.

Reduce the spicy effect;

2. There is a certain order for adding seasonings. You should put sugar first, then salt, vinegar, and soy sauce.

If you add salt first and then sugar, the penetration of sugar will be reduced and more sugar should be added. If you add vinegar too early, the sour taste will dissipate easily.

Add soy sauce at the end. If you like, you can also add some MSG at the end.
