How to choose fungus

Taste: Pure fungus has a pure taste without any peculiar smell and has a fresh fragrance. Otherwise, it is mostly spoiled or adulterated. Common adulterated products are soaked in alum water, alkaline water or mixed with sugar water. You can taste it to see if there is astringency, alkalinity or sweetness to identify it.

Blisters: Those with light body and great swelling after blisters are of high quality; those with slightly heavier body and average swelling after water absorption are of medium quality; those with heavy body and poor swelling after blisters are of inferior quality.
