Minced meat with peas

1 Pour 1 spoon of soy sauce and a little cooking wine into the minced meat and mix well. Wash the peas and the chili peppers and cut them into small dices;

3 Stir-fry until the minced meat changes color, add the peas and stir-fry for about 1 minute;

4 Pour half a bowl of water into the pot, cover the pot and boil for a while;

5 When the water is almost dried up, pour the chili peppers into the pot, stir-fry for a few times, and add some salt according to your taste.

Precautions

This dish does not require thickening, because peas contain a lot of starch. During the cooking process, some of the starch in the peas will dissolve, which directly serves the purpose of "thickening".

If you like more soup, just pour more water and leave some soup at the end. It tastes good when mixed with rice.

If you don't like spicy food, don't add chili peppers. But adding some spicy ones will enhance the flavor.

How to cook spring bamboo shoots and peas

Main ingredients: 150g spring bamboo shoots, 50g tender pea meat. Accessories: 1.5g salt, 2.5g MSG, 5g wet starch, 15g cooked chicken oil, 25g cooked lard.

Boil peas in boiling water until cooked, cool in cold water and drain. Dice spring bamboo shoots and blanch in boiling water. 75 grams of white sugar, 10 grams of fine salt, and 75 grams of soy sauce.

Blanch the peas in boiling water and cool. Dice the vegetarian ham, mushrooms, and bamboo shoots. Heat a wok, add 25 grams of vegetable oil, simmer the peas, add mushrooms, bamboo shoots, cooking wine, salt, and 150 grams of boiling water, and wait until the soup thickens to 2/3. Add the vegetarian ham cubes, add MSG, thicken with wet starch, drizzle with sesame oil, remove from the wok and serve.
