In the summer, pickling some sour cucumbers can stimulate appetite, help digestion, and remove greasiness. When pickling, you can wash the fresh cucumbers with clean water, remove the moisture, and place them in the sun for 2 to 3 days. After drying, take them out and put them in a sealable bottle, add an appropriate amount of white vinegar, a small amount of white sugar, and a small amount of table salt and mix well. After sealing and pickling for a week, the sour cucumbers will be pickled.

3. Hot and Sour Cucumber Strips

Cucumbers can also be pickled into hot and sour pickles. When pickling, cut the purchased cucumbers into long strips as thick as fingers, add table salt and mix well, then drain out the water and place them in the sun. At the same time, prepare an appropriate amount of chili peppers, wash them with clean water, and split them in the middle with a knife. Put the dried cucumbers and the cut chili peppers together, add rice vinegar, table salt, and a small amount of garlic cloves and shredded ginger, and mix well. The pickled cucumbers are sour and spicy and very appetizing, and are most suitable for people to eat in summer.
