I finally harvested three more eggplants from the garden, two varieties to make a bowl. I just picked them this afternoon, and they were fresh. I wanted to cook them last time, but I didn’t have minced meat, so I made a dry-fried eggplant. I didn’t expect it to be very popular. This time I want to make up for what I didn’t eat last time. I had some minced beef left over from cooking potatoes and green beans yesterday, which came in handy and also freed up some space in the refrigerator.

3 eggplants 1/2 pound ground beef

Half a green pepper and garlic slices

Ginger and chopped green onion

How to cook eggplant with minced meat

1. Cut the eggplant into dice and immediately put it in water, add a little salt and soak it, then drain the water before frying. This way the eggplant will not absorb oil and the color will be better.

2. Stir-fry the minced beef in a pan until dry (no oil is needed, the oil will come out after the water dries up). Then add cooking wine, ginger, and garlic slices, stir-fry until fragrant, add soy sauce, and a little dark soy sauce for coloring.

3. After the minced beef is fried, scoop it up, add oil to the pan, add garlic slices, minced ginger and chopped green pepper (if you like spicy food, you can add some Pixian bean paste) and fry until fragrant, then add the fried minced beef and stir fry evenly, then add the broth and salt to bring out the flavor, remove the eggplant from the water, drain the water and immediately put it into the soup. When the soup boils again, turn to low heat and cover it. Remove the lid and stir fry a few times in the middle. After the eggplant is chamfered, turn to high heat to dry the water, pour in the chopped green onion, and serve on a plate

Tips

2. If you like spicy food, you can use chili peppers, chili sauce, Pixian bean paste, etc.

3. Minced pork can also replace minced beef.
