Steps to make delicious roasted eggplant

Ingredients for roasting eggplant

How to cook roasted eggplant

1. You need eggplant, tomato and garlic, preferably round eggplant

2. Wash the eggplant and cut it into dice. No need to peel it. Soak the cut eggplant in clean water for 5 minutes, then remove and drain.

3. Wash the tomatoes and cut them into dice; slice or chop the garlic and set aside

4. Prepare a small bowl of sauce with the following ingredients: 3 teaspoons of sugar, 3 teaspoons of light soy sauce, 1 teaspoon of dark soy sauce, 2 teaspoons of vinegar, a little salt, a little starch, mix well and set aside. (You can use an ordinary small spoon at home, and you don’t need to add water to the sauce)

5. Heat the oil in a wok, add the eggplant cubes, fry until soft and set aside

6. Pour a little more oil into the original pot, heat it up and sauté the chopped green onion and some minced garlic. When the aroma comes out, pour in the tomato cubes, stir-fry for a few times, then pour in the fried eggplant cubes

7. Stir-fry for a few times and pour in the sauce. When the eggplant is soft and tasty, add the other half of the minced garlic and turn off the heat.

8. Or you can add minced garlic after turning off the heat, then cover the pot and simmer for a while to make the garlic flavor stronger. Finally, sprinkle with chives for a better taste.

Recommended dish: Braised eggplant with minced meat

Ingredients: 2 liang minced meat 6 eggplants (about 8 liang)

One slice of ginger and one clove of garlic

1. Add salt, MSG and water starch to the minced meat and mix well for later use

2. Wash the eggplant and cut into dices

3. Chop the ginger into small pieces, loosen the garlic with the back of a knife, remove the shells and chop

4. Heat the pan and add oil (a little more), add the minced meat and stir-fry quickly until it changes color, then serve.

5. Heat the remaining oil (if not enough, add more), add minced ginger and garlic, sauté until fragrant, add eggplant and stir-fry until soft, add minced meat, soy sauce, appropriate amount of salt, add water (to two-thirds of the actual amount), simmer for about five minutes, add sugar to thicken the soup, add MSG to taste, mix well and serve

Tips

1. The Hangzhou eggplants I used are the long and thin ones. However, eggplants are more glutinous nowadays and a bit more expensive. I bought them for 3 yuan per pound.

2. After the minced meat is coated with starch, it will be more tender when fried because it has absorbed enough water.

3. I used the same ingredients to make a minced meat eggplant before. The eggplant was steamed, which looked more beautiful and tasted more refreshing. This minced meat and eggplant is more flavorful, especially with rice, and has a unique flavor. Two same ingredients, different methods, the results are different.

4. Eggplant absorbs a lot of oil, so you can use a little more oil when frying.
