Seasonings: 5 grams each of salt and MSG, 50 grams of sugar, 5 grams of vinegar, 10 grams of cooking wine, 10 grams of spicy chili sauce, 50 grams of custard powder, 500 grams of salad oil, 250 grams of broth, and 2 grams of sesame oil.

How to cook yellow croaker in tomato sauce

1. Remove the internal organs of the small yellow croaker, clean it, cut it in half, add salt, MSG and cooking wine, marinate for 5 minutes, rinse it with clean water, sprinkle it with custard powder and set aside. Peel the eggplant and cut it into dice. Cut the Japanese tofu in the middle and cut it into 4 small strips.

2. Heat salad oil in a pan until it is 60% hot. Add the eggplant pieces and fry them for 2 minutes. Remove and place them at the bottom of the small casserole. Add the powdered small yellow croaker into the pan and fry on medium-low heat for about 3 minutes. Remove and place on top of the eggplant. Finally, fry the Japanese tofu strips in 70% oil on medium-low heat for 1 minute. Remove and place neatly on top of the yellow croaker.

3. Take a wok and add 10 grams of salad oil. Heat it to 70% hot. Add chili sauce, scallion segments, ginger slices, garlic slices, and dried chilies and stir-fry over high heat until fragrant. Add 250 grams of broth, season with salt, MSG, sugar, and vinegar, then pour in the diced green and red peppers and stir-fry briefly. Remove from heat and pour into the casserole with the main ingredients. Move the casserole to the stove and simmer on low heat for 3-5 minutes. Add coriander and sesame oil, cover it, and serve when the aroma comes out of the vents on the casserole lid.
