Ingredients for Eggplant and Pork Pot Stickers

Chopped green onion and minced ginger

Stock salt

Soy sauce and cooking wine

1. Add water to flour and make a soft dough. Put it in a bowl and let it rest for 30 minutes.

2. Add olive oil, chopped green onion, minced ginger, broth, salt, soy sauce, cooking wine, and MSG to the minced pork and beat in one direction.

3. Wash the eggplant, cut it into small pieces, chop it, add it into the meat filling and mix well.

4. Knead the dough until it is smooth and then roll it into long strips.

5. Roll out the dough into round pieces

6. Put the pork and eggplant filling on the dough

7.Pinch the dough in the middle, leaving openings on both sides to allow for ventilation and to make it easier to observe the meat filling and make it more tender and smooth.

8. Put a little salad oil in the pan, heat it up and place the wrapped pot stickers neatly in the pan.

9. Turn on the fire again and turn the pan so that each dumpling is covered with oil.

10. After frying for one or two minutes, pour in the flour-mixed water (thin), the water should cover 1/3 of the pot stickers

11. Cover and fry until the water is dry and the bottom is browned, then turn off the heat

Tips

1. Put oil in a frying pan, put in the pot stickers, and fry over low heat for one to two minutes.

2. Add a little flour to a bowl, pour in a little water, and stir to make flour water. (150ml:10g)

3. Pour in flour water, about 1/3 of the height of the pot stickers, and cover the pot. Fry until the flour water dries up and forms a crispy shell, and the bottom of the pot stickers turns golden and crispy, then turn off the heat and serve.
