Steps to make fried shrimp with enoki mushrooms

I like to eat seafood, and I especially like the fried shrimp with enoki mushrooms made by my mother. The taste is really good, so today I will share with you the simple production process:

Ingredients: 200g enoki mushroom, 300g shrimp, 80g carrot, 2 scallions Seasoning:

(1) 1 egg white, 1/3 teaspoon salt, 1 teaspoon starch

(2) 1/3 teaspoon salt, 1/2 teaspoon Shaoxing wine, 1/3 teaspoon sugar, 1/2 teaspoon sesame oil

Cooking Method

1. Dice the enoki mushrooms, cut the strips into 1-inch pieces, peel the carrots and cut into diamond-shaped slices, blanch the carrots and enoki mushrooms in boiling water until cooked, then remove and drain. 2. Remove the intestines and mud from the shrimps, wash them, dry them with a dry cloth, mix with the seasoning (1), and set aside.

3. Pour three cups of oil into a wok and heat over medium heat until it is 50% hot. Add the shrimps and fry until they turn white. Remove from the pan and drain.

4. Leave 1 teaspoon of oil in the pan, sauté the scallions until fragrant, then add all the ingredients and seasonings (2) and stir-fry until cooked.

Cooking Tips

1. After mixing the shrimp and seasoning, it is best to refrigerate for an hour to allow the moisture to completely dry out. 2. It is less likely to explode when frying, and the taste is also fresher and crisper.

Food incompatibility

Avoid eating shrimp with certain fruits. Shrimp is rich in nutrients such as protein and calcium. If you eat them with fruits containing tannic acid, such as grapes, pomegranates, hawthorns, persimmons, etc., not only will the nutritional value of the protein be reduced, but the tannic acid and calcium ions will combine to form insoluble compounds that irritate the stomach and intestines, causing discomfort, vomiting, dizziness, nausea, abdominal pain, diarrhea, etc. Seafood should be eaten at least 2 hours apart from these fruits.

Shrimp is especially suitable for middle-aged and elderly people, pregnant women, patients with cardiovascular diseases, people with kidney deficiency and impotence, male infertility, and people with weak waist and legs. People with chronic diseases and those who are suffering from internal heat should not eat shrimp. Elderly people with allergic rhinitis, bronchitis, and recurrent allergic dermatitis should not eat shrimp. Shrimp is a wind-inducing food, so people with skin scabies should not eat it. 2. It is more suitable for patients with cancer, hypertension, night blindness, dry eyes, malnutrition, loss of appetite, and rough skin.

3. It is more suitable for those who do mental work; people with gastrointestinal diseases, especially ulcers, should not eat too much; in addition, onions have a strong stimulating effect on sweat glands, and people with body odor should eat them with caution in summer; people with superficial deficiency and excessive sweating should also avoid eating them; eating too much onion can also damage eyesight.
