200g fish, tomato sauce, 4 choy sum, 100g egg white, scallion, a little salt and MSG, starch and Shaoxing wine, clear soup

1. Cut the fish into strips, marinate with salt and Shaoxing wine, add egg white and knead it into firmness, then mix well with water starch.

2. Heat the oil in a wok, scatter the fish strips into the wok and spread them out until they turn white jade-like in color, then pour out the oil.

3. Leave some oil in the original pan, add the scallions and sauté until fragrant. Chop the choy sum and serve on a plate.

4. Add a little oil to the wok and stir-fry the tomato sauce. Then add salt, MSG, Shaoxing wine and broth. Thicken with water starch. Add the fish fillets and stir-fry until done.
