Causes of lentil poisoning

The reason for lentil poisoning is that lentils contain hemagglutinin and saponin, which are chemically toxic. The toxic components in lentils can only be destroyed by heating them to 100 degrees Celsius for more than 10 minutes. However, when people eat lentils, there are often inappropriate preparations: blindly pursuing bright colors, they blanch or stir-fry at low temperatures or for a short time; collective canteens use large pots to stir-fry lentils, which makes it difficult to heat evenly. These will lead to poisoning due to improper processing methods.

Symptoms of lentil poisoning

Symptoms of lentil poisoning include stomach discomfort in the early stage, followed by nausea, vomiting, and abdominal pain; in severe cases, cold sweats and even shock. Mental and neurological symptoms are generally dizziness, headache, numbness of the limbs, back pain, etc. The incubation period of poisoning is generally about 5 hours, and some people may develop the disease 30 minutes after eating.

Prevention and treatment of poisoning

Lentils must be cooked

To prevent lentil poisoning, it is best to use cooking methods that require a longer heating time, such as stewing or roasting. You can also add some vinegar to minimize its toxicity.

Induce vomiting

Once lentil poisoning occurs, induce vomiting immediately in mild cases. The vomiting method is suitable for patients who are awake and can cooperate. Generally, use clean water, the temperature of which should not be too high or too cold, and drink about 500 ml each time quickly. Then use the index finger, chopsticks or chicken feathers to gently probe the throat to stimulate the nerves in the throat to induce vomiting. Repeat this process several times until the vomit is clear water. Note: It is forbidden to induce vomiting in patients with aneurysms or esophageal varices.

Gastric lavage

Gastric lavage can be performed on unconscious or uncooperative patients, and should be performed within 6 hours after eating.
