Spiced Edamame

400g edamame pods, 3 star anise, 5g licorice, 5g cinnamon, 1200CC water.

A. 1 tablespoon salt, 1 teaspoon MSG.

B. 1/2 teaspoon coarse black pepper, 1 tablespoon sesame oil.

1.Put star anise, licorice, cinnamon, water and seasoning A into a pot and bring to boil.

2. Wash the edamame pods and put them into the soup pot prepared in step 1. Bring to a boil over high heat, then turn to medium heat and continue cooking for about 3 minutes. Turn off the heat, remove the edamame pods and drain.

3. Put the edamame pods and seasoning B in a bowl and mix well.

Cooking Tips

If you want to make the edamame green after blanching, you can add a pinch of salt. Salt can stabilize chlorophyll and prevent it from being damaged. Since the potassium content in edamame is high, it can maintain a balance with the sodium in salt, thus eliminating the adverse effects of salt. At the same time, 100 grams of edamame also contains rich vitamin C, but there is still a lot left after blanching, which is its characteristic. Vitamin C has a weak resistance to heat, but in the case of edamame, it is an exception.
