Every 100 grams of dried morels contains 24.5 grams of protein, 2.6 grams of fat, 39.7 grams of carbohydrates, and also contains a variety of vitamins and minerals.

How to Eat Morels

Chicken Wings with Morels

1. Raw materials:

1. Main ingredients: 100 grams of dried morels and 5 pairs of chicken wings.

2. Seasonings, onions, ginger, soy sauce, five-flavor powder, salt, cooking wine, MSG, chicken broth, wet starch, and cooked lard.

2. Preparation method:

1. Soak the dried morels in clean water, then wash them, blanch them in water for a while, and then remove them and drain.

2. After washing the chicken wings, fold them into two pieces and put them in a bowl. Add salt, soy sauce, five-spice powder, cooking wine and a little water, mix well and marinate for half an hour.

3. Pour cooked lard into a wok and heat it over high heat until it is 50% hot. Add the chicken wings and fry until golden brown. Remove from the pan. Add morels, salt, green onions, ginger (smash), and chicken broth and bring to a boil over high heat. Then simmer over low heat for about an hour. When the chicken wings are cooked through, remove from the pan and place them around the plate, with the morels in the center.

4. Pour the juice of stewed morels into the wok over high heat, add soy sauce, MSG, etc. and thicken with wet starch. Pour it on the morels.

Note: Morel, also known as tripe, is one of the medicinal fungi in my country. It is sweet and flat in nature, and has the effects of nourishing the spleen and stomach, resolving phlegm and regulating qi. It is paired with chicken wings, which warm the middle and replenish qi, regulate qi and resolve phlegm, strengthen tendons and bones. It is suitable for symptoms such as exhaustion, spleen deficiency and diarrhea, qi deficiency and phlegm, long-term rheumatism, physical weakness, tendon pain or traumatic fractures.

Roasted Pork with Morel Mushrooms

1. Raw materials:

1. Ingredients: 100g dried morels, 200g pork belly with skin, 50g pea sprouts

2. Seasoning: egg white, honey, soy sauce, salt, cooking wine, chicken broth, MSG, pepper, cooked lard, sesame oil, and starch.

2. Preparation method:

1. Soak the dried morels in cold water and then wash them. Slice the pork belly with skin into 5 cm thick and 4 cm long slices. Pick and clean the pea sprouts.

2. Put the pork belly in a bowl, add soy sauce, cooking wine and honey, mix well and marinate for 20 minutes, then skim off the egg white, sprinkle with dry starch and mix well.

3. Pour cooked lard into the wok, and when the oil is 50% hot, add the pork belly, push it with a hand spoon and fry it until it turns golden brown, then pick it up and drain it in a colander. Leave some oil in the wok, squeeze the water out of the lamb chops and put them in to fry, then add salt and soy sauce and cook for a while, then add chicken soup and boil it, then add the pork belly and simmer it on low heat for 20 minutes. When the juice is reduced to 20%, mix the wet starch with a little water, add MSG and pepper, thicken it in the wok, shake the wok a few times, add pea sprouts, remove from the wok and drizzle with sesame oil.

Note: This dish is made with morels and pork. The morels in the dish have the effects of nourishing, regulating qi and resolving phlegm. Pork is sweet, salty and neutral in nature. It has the effects of nourishing the kidney and blood, nourishing yin and moistening dryness. The combination of the two ingredients is effective in nourishing. In addition, there is an ancient saying that eating too much pork is prone to phlegm and impotence. Now morels are used with pork because morels have the effects of regulating qi and resolving phlegm.
