Fungus nutrition

Fungus nutrition

Fungus is a traditional health food in China. I heard that it contains a lot of iron and is very good for replenishing blood.

fungus

It is a nutritious edible fungus, a traditional health food and export commodity in my country. It has many aliases. Because it grows on rotten wood and looks like a human ear, it is called wood ear; because it looks like a moth or butterfly, it is also called wood moth; and because it tastes like chicken, it is also called tree chicken and wood machine (the ancient people of southern Chu called chicken a machine).

Northeast China, Hubei, Zhejiang, Yunnan and other places are the main production areas of Chinese fungus. The fungus produced can be roughly divided into five types: black fungus, white fungus, jin fungus, red fungus and snow fungus.

Fungus grows on the rotten wood of more than 120 broad-leaved trees such as oak, poplar, banyan, and locust, either singly or in groups. Its fruit is colloid and disc-shaped. Fungus is soft when fresh and becomes keratin when dried. When eaten, it has a delicate taste and a special flavor. Not only that, fungus also has the effects of invigorating qi, satisfying hunger, lightening the body and strengthening the mind, stopping bleeding and relieving pain, and replenishing blood and activating blood circulation. In addition, fungus is rich in polysaccharide colloids, which have a good lubricating effect and is an important health product for miners and textile workers.

effect

1. Fungus is rich in protein, gelatin, and a variety of minerals and other nutrients. Black fungus has the effect of nourishing and moisturizing, and is very effective for hemorrhoids, constipation bleeding, high blood pressure, etc. White fungus can produce fluid and resolve phlegm, moisten the lungs, treat coughs, and help the body replenish qi and activate blood circulation.

2. The protein content of fungus is higher than that of rice and noodles. The calcium content is about 30 to 70 times that of meat, and the iron content is several times that of pig liver. It is of great help to the human body.

3. Rich in vitamins, lecithin, cephalin, sugar, etc., various rare nutrients make fungus a high-nutrition value but very popular food. It has excellent effects of nourishing and beautifying, so it is praised by nutritionists as " the meat among vegetables " .

4. Fungus belongs to the gelatinous mushroom family. It can absorb oil, stimulate gastrointestinal motility, promote defecation and lower cholesterol. It can effectively prevent the rise of blood pressure and reduce blood clots in the brain. It is the best choice for patients with cardiovascular diseases and those who want to lose weight.

5. Fungus contains anti-tumor active substances, which can enhance the body's immunity. Regular consumption can prevent and fight cancer.

6. Fungus also has a relatively significant function in dissolving endogenous foreign bodies such as gallstones and kidney stones.

Storage instructions

Put the fungus in a fresh-keeping box or a sealed bag and refrigerate it.

Cooking knowledge

1. Dried fungus should be soaked in warm water before cooking. The parts that are still tightly together after soaking should not be eaten.

2. To enhance the taste of the fungus, blanch it in hot water and then quickly soak it in ice water.

3. Put the fungus in warm water, then add two spoons of starch and stir. This method can remove the tiny impurities and residual sand in the fungus.

4. Fresh fungus contains toxins and cannot be eaten.

5. Black fungus is mainly used as a side dish. It can be eaten in many ways, including vegetarian and meat dishes. It can be used in stir-fries, stews, soups, etc., and the taste is extremely delicious.

Dietary precautions

1. People with bleeding diseases or diarrhea should not eat or eat less.

2. Pregnant women should not eat too much.

3. From the perspective of food medicinal properties, the cold nature of snails and the slippery nature of wood ear are not conducive to digestion, so the two should not be eaten together.

4. People with hemorrhoids should not eat black fungus and pheasant together. Pheasant is slightly poisonous, and eating the two together can easily induce hemorrhoid bleeding.
