How to make delicious corn tortillas

Ingredients for yeast-flavored corn tortillas

Cornmeal flour

Corn Kernels Pecan Milk

White sugar yeast powder

Oil

How to make corn tortillas

1. Put half cornmeal and half white flour in a basin

2. Add corn kernels

3. Add some pecan kernels. (This is not necessary. My dad made it for me. He put the leftovers from making pancakes here, otherwise they would go rancid in the hot weather.)

4. Add a teaspoon of yeast powder

5. Stir well with chopsticks, then add a tablespoon of sugar

6. Pour in the milk and stir with chopsticks

7. Stir into a batter that is not too thin, cover and ferment. (I fermented it the night before and baked it the next morning. I like the dough to ferment for a long time, so that it has a little sour taste of over-fermentation, especially corn tortillas, which are especially delicious with a little sour taste)

8. After it has risen, stir it evenly again, heat the oil in a frying pan, scoop the batter with a spoon and put it into the pan to spread into a pancake

9. Fry until both sides are cooked.

Tips

Break it open and look at the corn kernels inside. They are very textured and taste very sweet. The corn is sticky corn that my dad brought back from his hometown in the countryside last fall. My sister's family grows it. My dad cooked it and peeled the kernels off and gave it to me. I put it in Lock & Lock containers and froze it in the refrigerator. I froze two large containers. When I remember to cook, I throw a handful in. It's fragrant and sweet. I have been eating it until now!

If you don’t have the conditions like me, with a sister who lives in the countryside and a father who always thinks of me, then you can also buy the most delicious corn in the market when the tender corn is ripe, cook it, peel the kernels and freeze them, and grab a handful when you want to eat it, which will keep you sweet until the tender corn is ripe next year!
