Nutritional value of carrots

Carrot is a plant ginseng. Let us learn about its nutritional value.

Nutritional value of carrots

Carrots have great nutritional value, and the content of carotene ranks among the highest among vegetables. Carotene is converted into vitamin A by enzymes in the small intestine. Vitamin A has important physiological functions such as maintaining the normal function of epithelial cells, preventing and treating respiratory infections, promoting human growth and development, and participating in the formation of rhodopsin.

However, carotene is a fat-soluble substance. Only when it is dissolved in oil can it be converted into vitamin A by carotene enzymes in the liver and intestinal wall and absorbed by the human body. If carrots are eaten raw, 90% of the carotene will become a "passerby" in the human body and be excreted, and will not play a nutritional role. Therefore, carrots should not be eaten raw.

When eating carrots, the absorption rate of carotene is higher if they are fried or stewed than if they are eaten raw.

You can eat more, no harm!

It has more nutritional value to keep you healthy for life:

1. Make your eyes bright and attractive

Are you curious about why carrots can help your eyesight? This is mainly because vitamin A and carotene have the ability to promote the production of photosensitive pigments in the eyes, prevent night blindness, enhance the eyes' ability to distinguish colors, and improve eye fatigue and dry eyes. Carrots contain a lot of these nutrients.

2. Prevent Cancer

A study in the United States on people who often eat carrots in the Chicago area found that only 2 cases of lung cancer were found in 500 people, while the probability of cancer in people who do not often eat carrots is 7 times that of the former. The cancer research team of the University of British Columbia in Canada also found in experiments that carotene and vitamin A in carrots can reduce 75% of cancer cells in cancer patients. A paper published in the Journal of Cancer Research reported that eating more carotene may be a good way to prevent prostate cancer.

3. Antioxidant

Carrots are rich in vitamins A, C, E, carotene and lycopene, which are all very good antioxidants. Few fruits and vegetables can possess such a comprehensive range of antioxidant ingredients as carrots. By eating more carrots, you can save a lot of money on buying antioxidant vitamins.

4. Make your skin beautiful

Carotene is converted into vitamin A in the human body. Combined with the vitamin A that carrots already possess, these two nutrients can enhance the integrity and growth of epithelial tissue, promote the synthesis of collagen cells, make the skin hydrated and beautiful, and prevent the skin from drying out.

5. Regulate immune function

The various nutrients and antioxidant components in carrots all have the function of regulating the immune system; the wood content in carrots can even enhance the body's immunity.

6. Prevent colds

Studies have shown that when there is insufficient carotene in the body, the mucous membranes of respiratory organs such as the bronchi will become more fragile and more susceptible to colds.

7. Prevents Cardiovascular Disease

The Netherlands once conducted research on carrots and found that carotene can reduce the chance of heart disease in middle-aged and elderly people. In recent years, there have also been research reports showing the good effectiveness of lycopene in preventing cardiovascular disease.

8. Prevents constipation

In fact, every kind of fruit and vegetable contains some fiber, so they all have the effect of preventing constipation, and carrots are no exception. If you don’t like the taste of carrots, you can add honey or other mixed fruit and vegetable juices to reduce its taste.

9. Boosts Metabolism

The B vitamins in carrots can relieve stress, relieve fatigue, and promote metabolism, adding points to your weight loss plan!

Carrots are edible for all body types

Carrots are a sweet and neutral ingredient that can be eaten by people of all body types without causing any burden on the body. They can also be eaten with the aforementioned cucumbers, which are cold in nature, or seasonal bamboo shoots, which can help neutralize the flavor of the ingredients.
