How to make pumpkin pickles

1. Ingredients: 4 kg old pumpkin, 1 kg red pepper, ginger, garlic, salt, sugar and glutinous rice flour in appropriate amounts.

2. Remove the hard skin from the pumpkin, wash it clean, and cut it into slices. It is best to make the pumpkin slices three to four millimeters thick and about the size of a thumb.

3. Put the sliced ​​pumpkin in the sun to dry it, so that the moisture will be lost. The thickness of the pumpkin slices will be much thinner. While drying the pumpkin slices, chop the red pepper into small pieces, remove the foreskin of the garlic and chop it into small pieces, wash the ginger and cut it into shreds for later use.

4. Mix the peppers, ginger and garlic together, add appropriate amount of salt and marinate for at least 24 hours. After marinating, mix the pumpkin slices, glutinous rice and appropriate amount of sugar together, then steam them in a large pot.

5. Take out the steamed pumpkin and knead it into balls with your hands, place it on oilcloth, move it to the sun to dry, and put it in the house before the sun sets. Continue to dry it the next day until the pumpkin is no longer sticky. At this time, the pumpkin dish is ready and can be stored in a cool and ventilated place.
