How to stir-fry zucchini

Zucchini is a vegetable that can be seen in all seasons, but when it is on the market in large quantities, not many people buy and eat it. The reason is mostly because people don't know how to stir-fry zucchini to make it delicious. I am a food lover myself, and my friends all think the zucchini fried with shrimps I made is delicious. Now I write down the recipe so that those who don't know how to stir-fry zucchini can use it as a reference.

Fried zucchini with shrimp

Two hundred and fifty grams of fresh red shrimp, thirty grams of wolfberry, one zucchini, a little cooking wine, a little salad oil, a little fine sugar, and appropriate amounts of chicken essence and salt.

Steps to cook fried zucchini with shrimp

1. Remove the shells of fresh red shrimps, wash them with clean water, put them in a bowl, add a small amount of salt and cooking wine and marinate them. The marinating time should not exceed ten minutes.

2. Wash the zucchini and cut it in half. Use a small spoon to remove the seeded part and discard it. Then cut the zucchini into small pieces of your choice and set aside.

3. Put water in the pot and bring it to a boil over high heat. Then blanch the cut zucchini slices in the boiling water for one minute, then quickly take them out and drain the water for later use.

4. Add a small amount of salad oil into the wok and heat it to 50% hot. Then pour the marinated shrimps into the wok and stir-fry. When they are half cooked, add the zucchini slices and stir-fry.

5. Add sugar, salt, chicken essence and other seasonings while frying, and continue frying until cooked. Zucchini should not be fried over high heat, otherwise it will change color.

6. During the frying process, put the wolfberries in another bowl, add warm water and soak them for a while, then take them out and stir them a few times in the pot before serving. The dish with red, green and white colors is particularly tempting.
