How to pickle radish

Wash the radish and cut it into small pieces with a knife. Put a layer of salt in the container first, then a layer of radish, then salt, and so on, until all the radishes are put in. The radishes on top should have more salt. Turn the radishes every day to make them taste good. They can be taken out to dry in 3 to 4 days. Don't throw away the salt water in the container when you take the radish out. When the radish is dried to 8 layers, boil the salt water in the container, put the radish in, add sugar, MSG, and other seasonings, turn them over, and add them according to your taste. Take it out to dry again. This time it should be a little drier, but not too dry, because it will affect the crispness. Then put it in a container and seal it well. It can be eaten after half a month.

If you are pickling a large amount, wash the radish, put it in a jar, add an appropriate amount of salt, and press stones on it. After a period of time, soup will come out of the jar. Turn the radish upside down and continue to press it. If you are pickling a small amount, you can slice or shred the radish, add some coriander, green pepper shreds, and pear cubes, pickle it for two or three days, drain the soup, add sesame oil, vinegar, and MSG, and it is ready to eat.

There is a farmer's method: wash the radishes, put them in the sun until there is about 9 layers of water left, and then put them in a jar (note that there should be no water in the jar, otherwise the pickled radishes will become sour). Put a layer of radishes and sprinkle some salt on them. After that, put a board on the radishes and press a heavy object like a stone! After more than ten days, the radishes will release water. The radishes in these few days can be eaten. However, the radishes at this time will still be a bit spicy when eaten raw!

Just put the cooked white radish in salt water. The longer the salt water is, the better. If you don't have salt water, you can make it yourself. It requires a lot of seasonings. The effect is not very good.
