100g rice, 100g fresh grass carp, 3 dried mushrooms, 50g celery, 3g shredded ginger, 1 teaspoon (5g) salt, 2 teaspoons (10ml) sesame oil, a little dry starch

How to make mushroom and fish porridge

Soak dried shiitake mushrooms in cold water until soft, wash and remove the stems, then cut into thin strips. Remove the tendons and leaves from celery, wash and chop. Slice the grass carp into thin slices and marinate with a little cornstarch for later use.

Wash the rice, add 1500ml of water to the pot, bring to a boil over high heat, pour in the rice, and simmer for 60 minutes over low heat. Then turn to high heat, add shredded mushrooms and ginger, and boil for 2 minutes. Add the fish fillets and turn off the heat when the water boils.

Add chopped celery, salt and sesame oil to taste.

Tips

When cooking porridge, pour the washed rice into the water after it boils, rather than boiling the water and rice at the same time. This way, the temperature inside and outside of the rice grains are different, and many fine cracks will appear on the surface of the rice grains, making it easy to bloom and ooze starch. The starch will continue to dissolve in the water, and the porridge will be thicker.

When cooking rice porridge, the pot may overflow. In order to prevent the rice crumbs and soup from overflowing, you can add 5 or 6 drops of salad oil into the pot during the cooking process.

You can cook more porridge at one time and prepare more porridge ingredients. Fresh ingredients such as vegetables, meatballs, shrimps, etc. can be used as porridge ingredients. In this way, you can taste different flavors of raw porridge.
