Material

The ratio of black sesame to rice is about 4:1 (in terms of volume). This is the most basic raw material, and you can also add walnuts, peanuts, etc. Black sesame itself is not sticky, so if you want to make a fragrant and thick sesame paste, you have to add some rice. This time I used brown rice, but you can also use millet, black rice, purple rice, and any other sticky rice.

1. Wash the raw black sesame seeds first. Washing sesame seeds is a very troublesome thing. Sesame seeds float on the water and will be washed away by the water if you are not careful. I wash them like this: prepare two large bowls, put water in each, wash the sesame seeds in one bowl, and then use a small strainer with fine mesh to scoop them into another bowl. At this time, you will see some dust at the bottom of the bowl. Then change to another bowl of clean water. After pouring back and forth several times, the sesame seeds will be washed clean.

Soak the washed sesame seeds and brown rice in water for eight hours, then blend them into a paste in a blender. Pour the paste into a pot and cook. Stir with chopsticks to prevent sticking. Cook for five minutes on low heat after the pot boils. Be careful that the sesame paste will splash out after the pot boils, so don't get burned.

Another method is to fry the black sesame seeds and rice separately, then grind them into powder, and then mix them with boiling water to make a paste when eating. This is probably what is sold outside. This method is easy to eat but troublesome to make, and frying them may cause sore throat, so I still prefer the first method.
