Perilla is the mature fruit of Perilla and Perilla frutescens of the Lamiaceae family. Perilla is an annual herb that is cultivated all over the country and grows in mountains, roadsides, village edges or wastelands. The fruits are harvested in autumn when they are ripe, impurities are removed, and they are dried in the sun.

Perilla seed nutlets are oval or spherical, 0.6 to 2 mm in diameter, with a gray-brown or gray-brown surface, dark purple reticular patterns, slightly pointed at the base, and with a fruit stalk mark. The pericarp is thin and brittle, the seeds are yellowish-white, the seed coat is membranous, and there are 2 cotyledons, which are off-white and oily. They have an aroma when crushed and taste slightly spicy.

Wild perilla seeds are slightly smaller, with a diameter of 0.6 to 1.5 mm. The surface is brown or gray-brown, and the outer layer often peels off, revealing a light yellow stone cell layer.

The best ones are those with large, full grains, gray-brown color and rich oil content.

Due to the processing methods, they are no longer divided into perilla seeds, fried perilla seeds, honey perilla seeds, and perilla seeds cream. After processing, they are stored in a dry container. The honey perilla seeds are sealed and placed in a cool and dry place to prevent moisture and moth.

The effect of perilla seed porridge

1. Perilla seed can enhance learning and memory functions. Its active ingredient is perilla seed oil, which can promote the learning and memory functions of mice, and this effect is related to the content of nucleic acid proteins and monoamine neurotransmitters in the mouse brain.

2. Perilla seed has the effect of lowering blood lipids.

3. Perilla seed has the effect of lowering blood pressure, and its active ingredient is α-linolenic acid.

4. Perilla seed has the effect of inhibiting platelet aggregation, and its active ingredient is α-linolenic acid.

5. Perilla seed has antiseptic and antioxidant effects and can be used for long-term storage of food and medicine.

6. Perilla seed has anti-cancer effects.

7. Perilla seed has antibacterial effect. 0.1% perilla seed oil has inhibitory effect on Proteus, yeast, black mold, Penicillium and many molds in nature.
