How to make yuba porridge with scallops

Wash the fresh scallops, cut them into slices, and marinate them with a little dry starch. Soak the yuba in warm water until soft, wash them, and cut them into shreds.

Wash the rice clean, add 1500ml of water to the pot, bring to a boil over high heat, then pour in the rice. After boiling, simmer over low heat for 60 minutes.

Change the heat to high and add the bean curd sheets and cook for 3 minutes. Then add the scallop slices and shredded ginger. Bring to a boil and season with salt, chopped green onions and white pepper.

Tips

When cooking porridge, pour the washed rice into the water after it boils, rather than boiling the water and rice at the same time. This way, the temperature inside and outside of the rice grains are different, and many fine cracks will appear on the surface of the rice grains, making it easy to bloom and ooze starch. The starch will continue to dissolve in the water, and the porridge will be thicker.

When cooking rice porridge, the pot may overflow. In order to prevent the rice crumbs and soup from overflowing, you can add 5 or 6 drops of salad oil into the pot during the cooking process.

You can cook more porridge at one time and prepare more porridge ingredients. Fresh ingredients such as vegetables, meatballs, shrimps, etc. can be used as porridge ingredients. In this way, you can taste different flavors of raw porridge.
