Nutritional value of fresh shrimp

Fresh frozen shrimp is extremely nutritious, rich in minerals such as protein, potassium, iodine, magnesium, phosphorus, vitamin A, aminophylline, astaxanthin, etc. It is an excellent food for people who are weak or need to recuperate after illness. It can also reduce the cholesterol content in the blood, prevent arteriosclerosis, and dilate the coronary artery, which is beneficial for preventing hypertension and myocardial infarction. However, the taste is not as good as fresh shrimp.

Generally, seafood products carry cold-resistant bacteria. When fresh shrimps are placed in the refrigerator for freezing and preservation, these cold-resistant bacteria will continue to multiply, which will reduce the safety of eating shrimp meat. For example, the most important bacteria in seafood, Vibrio parahaemolyticus, is a marine bacterium commonly found in seafood such as fish, shrimp, crab, and shellfish. It has a weak resistance to high temperatures and can be completely killed by temperatures above 80°C for 4-5 minutes. Chilled shrimps must be cooked at high temperatures for a relatively long time before they can be eaten. In addition, the protein contained in seafood is different from that in other meats, and its decomposition rate is relatively fast. After freezing, fresh shrimps will cause some changes in the properties of the protein, produce amines, and make the shrimp meat lose its elasticity and the taste is greatly reduced.

The healthiest way to eat chilled shrimps is to boil them in salt water. After thawing, boil them in boiling salt water over low heat for four or five minutes before eating. Alternatively, you can braise or fry them in oil, which are both top-notch delicacies on the table.

It should be noted that frozen shrimp should be cooked promptly after thawing and should not be left in the air for too long, otherwise the protein in the shrimp meat will easily undergo oxidation reaction in the air and turn black.

How to cook fresh shrimp

Fried Shrimp

1. Materials.

2. Remove the head and pick out the shrimp thread with a toothpick.

3. Mix chicken powder, salt, light soy sauce, oyster sauce and peanut oil and marinate for about 15 minutes.

4. Heat the oil in a pan and stir-fry the shrimps.

5. Stir-fry quickly over medium heat.

6. Add some chopped green onion and stir-fry until cooked and serve.

7. Fresh and delicious shrimps.

Stir-fried Shrimp with Chives

1. Remove the shrimp heads and shrimp threads, wash and drain the water; cut the ginger into shreds and cut the green onions into inch-long pieces.

2. Pour oil into the wok, add shredded ginger and scallion and fry until fragrant.

3. Add the shrimp and stir-fry over high heat.

4. Add salt, sugar, soy sauce, pepper and chicken essence and continue to stir-fry.

5. Add the scallion leaves and stir-fry evenly. (Note: It takes about 5 to 6 minutes from the time the shrimp is put into the pot to the time it is taken out of the pot. Use less salt. It will not taste good if it is too salty).
