2 pieces of monk fruit, 1 lotus root, 7 dried red dates, 3 tablespoons (45g) of rock sugar, 600ml of water

How to make sugar water monk fruit

Wash the lotus root, peel it, and cut it into 1cm thick slices. Soak the dried red dates in warm water for 15 minutes until they are swollen, then rinse them.

Put water and rock sugar into a pot, bring to a boil over high heat, then add monk fruit and dried red dates, and simmer over low heat for 20 minutes.
