Ingredients and cooking methods for stir-fried lentils with rice

Fried lentils with rice is my favorite. My grandma often made it for me when I was a child. Now I rent a house outside and have no time to go home, so I learned to make it myself. Here is the specific method:

Introduction to Stir-Fried Lentils

When I saw the lentils at the vegetable market, I remembered the walls in front of and behind the house in my hometown when I was a child in the summer. They were covered with lentil vines and loofah vines, winding up the walls. Some grew outside the walls and were picked by neighbors or passers-by. I didn’t feel sorry about it because there were too many of them. Vegetables grow very fast in summer and I couldn’t eat them all at once.

I have seen two colors of this kind of lentil, and another kind is purple-red. Whenever I pick such a kind, it seems to be worth a different price. In fact, the color becomes darker after frying, and it is not as good-looking as raw.

There is also a kind of lentil that is a mixture of purple and green. It looks flat like a shell, but it does not taste tender and meaty.

My mother and grandfather call this lentil moth-shaped bean. Since I was a child, I thought that this lentil might look like eyebrows, curved like a girl's beautiful eyebrows, so it is called moth-shaped bean. I don't know if it is true, but I always like to put it on my eyebrows, hoping that I will have a pair of eyebrows when I grow up.

1. First, remove the old tendons at both ends of the lentils, wash them, boil them in water, remove them and put them in cold water.

2. Heat the pan, add oil, add minced garlic and dried red pepper, stir-fry for a while, then add lentils

3. Fry until the surface is wrinkled, add salt and chicken seasoning when cooked.

Tips

Lentils contain toxic proteins, lectins, and saponins that can cause hemolysis, so they must be cooked before consumption, otherwise food poisoning may occur. *

If you don't use hot water, you can extend the frying time and add appropriate amount of water to cook.
