Honey Kumquat

I like kumquats, and eating a few leaves a lingering fragrance. It is the season for kumquats to be on the market again. Make a jar of honey kumquats, which can be used as candied fruit or as tea with honey. I don’t know if it is because the kumquats here are not particularly mature because they have just been put on the market or because of the water and soil, but the taste always feels not as fragrant and glutinous as those in China. However, the taste of honey kumquats is almost the same.

Material

500 grams of kumquats, 100 grams of rock sugar, and 3 spoons of honey.

How to make honey kumquat

1. Wash the kumquats and soak them in light salt water for 1 hour, then gently rub them with your hands and drain them;

2. Cut the kumquat in half with a knife and pick out the seeds with a toothpick;

3. Put the kumquats into a casserole, add rock sugar and water, the amount of water should be about 60% of the kumquats, boil over high heat, then turn to low heat and cook for about 16 minutes until the kumquats become soft, turn off the heat and let them stay in the casserole overnight (about 12 hours);

4. Take out the trapped kumquats and put them into a clean sealed bottle or fresh-keeping box. Pour three spoons of honey on them, cover tightly and put them in the refrigerator. You can take them out when you want to eat them.

5. The remaining juice in the casserole can be used to make tea.

Tips:

The container must be clean and sealed, and a clean, oil-free spoon or chopsticks must be used when taking the kumquats. The cooking time can be adjusted according to the maturity of the kumquats, and the amount of rock sugar and honey can be increased or decreased according to personal preference.
